چکیده

ضایعات محصولات کشاورزی یکی از معضلات جدی بخش کشاورزی ایران، بویژه زیربخش باغبانی است. باتوجه به این نکته که بخش مهمی از ضایعات بوجودآمده در محصولات کشاورزی در طول زنجیره تأمین، ناشی از عدم وجود راهبردهای مناسب در جهت مدیریت ضایعات می‌باشد، تدوین راهبردهای مدیریت ضایعات در کشور لازم به‌نظر می‌رسد. مطالعه حاضر با استفاده از روش تحقیق آمیخته(ترکیبی از مصاحبه نیمه‌ساختارمند و پیمایش) انجام شد.برای این منظور ضمن بررسی میدانی زنجیره تأمین سیب در استان تهران و مصاحبه با خبرگان و صاحب‌نظران این زنجیره، ابتدا نقاط قوت، ضعف، فرصت‌ها و تهدیدهای موجود و پیش روی زنجیره شناسایی شد. پس از آن با بهره‌بردن از روش تحلیلSWOT، فضای راهبردی حاکم بر این زنجیره مورد تحلیل قرار گرفت و درنهایت راهبردهای لازم جهت بهبود آن تدوین شدند. ابزار و روش اصلی جمع‌آوری داده‌ها، مصاحبه نیمه‌ساختار‌یافته و پرسشنامه محقق‌ساخته بود. یافته‌های تحقیق نشان داد، زنجیره تأمین سیب، نقاط ضعف و تهدیدهای زیادی داشته و فضای راهبردی اصلی حاکم بر آن، از نوع تدافعی (WT) با وزن نهایی(41/0) می‌باشد. همچنین، از مهم‌ترین راهبردهای شناسایی‌شده برای بهبود مدیریت ضایعات این زنجیره عبارتند از، افزایش سهم سیب درصادرات ، آموزش مدیران باتجربه در حوزه زنجیره‌های تامین و ارزش ، توانمندسازی و یکپارچه‌سازی تشکل-های موجود.

چکیده [English]

One of the major issues facing Iran's agriculture sector, particularly in the horticulture sub-sector, is the waste of agricultural products. It becomes crucial to develop waste management strategies in the country since a significant portion of the waste produced in agricultural products across the supply chain is due to the absence of effective waste management methods. The mixed research approach was used to carry out the current study (combination of semi-structured interview and survey). For this goal, a field study of the apple supply chain in the province of Tehran as well as interviews with specialists and experts were conducted. First, the chain's strengths, weaknesses, opportunities, and threats from the present as well as the future were noted. The strategic environment governing this chain was then examined using the SWOT analysis method, and finally the required improvement initiatives were developed. The research's findings revealed that the apple supply chain is vulnerable to numerous threats, and defensive type strategy (WT) with a final weight of 0.41 is the primary strategic space that controls it. Increasing the proportion of apples exported, training experienced managers in the value and supply chains of apples, empowering and integrating existing organizations are also among the most significant solutions found to improve waste management in this chain.
